+ Ingredients: 

  • 1kg piece meat rear end, fat managed, attached with string
  • 2 tbsp olive oil
  • 2 tbsp new thyme leaves
  • 1 huge red onion, meagerly cut
  • 2 child fennel, cut into wedges
  • 2 little yams, cut into wedges
  • 1 1/2 cups (375ml) great quality meat stock
  • 50g spread, cubed
  • Steamed broccolini, to serve 

+ Directions:

- Stage 1

Preheat stove to 200C (180C fan-constrained). Brush hamburger with a large portion of the oil, season and sprinkle a large portion of the thyme over meat.

- Stage 2

Place onions in base of cooking dish and put hamburger on a rack in the dish. Add ½ a cup water to base of dish. Broil for 45 minutes for interesting, 55 minutes for medium and 65 minutes for all around good done. For simplicity and exactness utilize a meat thermometer.

- Stage 3

Place fennel and yam in an enormous baking plate, sprinkle with residual oil and season. Cook with meat for 30 to 35 minutes or until delicate and brilliant.

- Stage 4

Put meat on a plate, cover freely with foil and rest for 20 minutes. Meagerly cut.

- Stage 5

To make the sauce place cooking dish with skillet juices and onion on oven over medium-high hotness. Add stock, bring to the bubble and stew until blend lessens and thickens somewhat. Pour in any additional juices from rested meat cook. Race in spread and remaining thyme.

- Stage 6

Serve hamburger broil with sauce, cook fennel, yam and broccolini.
