+ Fixings:
1- For the dressing
- 2 tbsp rapeseed oil
- juice 1 lemon
- 1 tsp balsamic vinegar
- 1 garlic clove , ground
- ⅓ little pack basil , leaves slashed
- 3 pitted dark Kalamata olive , flushed and hacked
2- For the serving of mixed greens
- 2 eggs
- 250g new potatoes , thickly cut
- 200g fine green beans
- ½ red onion , finely slashed
- 14 cherry tomatoes , divided
- 6 romaine lettuces leaves, attacked reduced down pieces
- 6 pitted dark Kalamata olive , flushed and split
+ Technique:
- Stage 1
Combine the dressing fixings as one in a little bowl with 1 tbsp water.
- Stage 2
In the mean time heat up the potatoes for 7 mins, add the beans and bubble 5 mins more or until both are simply delicate, then, at that point, channel. Bubble 2 eggs for 8 minutes then, at that point, shell and divide.
- Stage 3
Prepare the beans, potatoes and remaining plate of mixed greens fixings, aside from the eggs, together in a huge bowl with a large portion of the dressing. Orchestrate the eggs on top and shower over the leftover dressing.
